Dear Narinder,
In order to prepare for AIIMS exam you should refer NCERT books first to work on your concepts and to build your fundamentals strong.
Apart, from NCERT you can refer below recommended books
Biology
Trueman’s Biology Vol. 1 & 2
Physics
HC Verma
Chemistry
OP Tandon
Arihant
You should solve previous year papers and mock test series as well for your practice.

For Biology, NCERT is everything. I repeat, everything.
For Physics and Chemistry, conceptual knowledge of the subject is important and most of the times, it can't be built by reading mere NCERTs.
If you are able to build concepts solve as many PYQs as you can. That will help in proper assessment of your knowledge. Mock test papers especially of ALLEN are the best.

Follow only and only ncert books for aiims mbbs entrance exam. Each question of biology section including assertion reason type questions are from ncert books only.
However for practising, solve previous year's question papers of aiims mbbs entrance exam.and practise numericals of physics and chemistry on daily basis. Have revision of the topics which you have read regularly.
