hi piyush there are many good books out there for the preparation of NEET , i will tell you how did, but bear in mind it all comes to individual preference and it always varies, i used NCERT text books for all subjects along with my coaching institute materials, question banks provided by them, i also used to solve the arihant previous year question papers, i referred concepts of physics by hc verma, op tandon and jd lee for chemistry,biology @ your finger tips. hope this helps , good luck

Concepts of physics by H. C. Verma
Problems in general physics by I. E. Irodov
BIOLOGY - Truman's biology
ABC of biology by Dr. B. B. Arora & A. K Sabharwal
Dinesh objective biology.
INORGANIC CHEMISTRY - J. D Lee or O. P Tandon
PHYSICAL CHEMISTRY - P. Bahadur
ORGANIC CHEMISTRY - O. P. Tandon or Morrison & Boyd.
Most importantly, read NCERT textbooks well. Also go through the previous years papers to evaluate yourself from time to time.
You can follow MTG publications or Arihant for the same.
For the GK section of AIIMS-UG entrance, keep track of the current affairs available from various sources.

Honestly it totally depends on from where a person grabs the content and concepts to the fullest. I'm listing those books that works for most of the aspirants and hope it will be helpful for you too.
NCERTs of each subject are to be studied thoroughly especially biology and chemistry and the rest are listed below:
Chemistry : O.P. Tandon (physical chemistry)
For inorganic chemistry firstly read NCERT thoroughly then solve questions from MTG previous year solved question papers.
D.K. Singh objectives for organic chemistry
Physics :
For concepts : HC verma plus your own notes
For objectives : DC pandey is sufficient
For biology :
NCERTs should be studied from line to line , each word of it .
Trueman 's volume 1 &2 along with Dinesh objectives and MTG objectives.
Read and revise them multiple times and give tests more and more.

For biology, refer the following.

2) Dinesh- Objective biology
3) Pradeep publication Biology
4) GRB'S Publication Biology.
For Physics refer to he following books.
1) H.C.Verma - Concepts of Physics.
2) D.C Pandey - Objective Physics.
3) Fundamentals of physics by Walker
4) Problems in Physics by I.E.Irodov
For chemistry you can refer the following books
1) O.P Tandon - Physical Chemistry
2) Morrison and Boyd - Organic Chemistry
3) Modern ABC's of chemistry

Ncerts are mandatory to have, refer the rest of the books and find out which one suits you. I would advice you not to buy all the books but to refer them and see which one is better for you.
In the end it doesn't depend upon which book is better but how good can you understand the concepts
Also, for the general knowledge subscribe magazines, they will be useful.

As you said you will be attempting 2019 entrance, you must be in 11 std...so you will be attempting NEET UG 2019 , which is around1 yr and 5 months from now...so you have to make your own study plan and follow it properly with dedication and PATIENCE....you have to devote most of time say 80 % in NEET preparation and 20 % in board exam preparation
Most important for NEET/AIIMS is your NCERT books as these books include basic principles and concepts and provide accurate information.
BUT KEEP IN MIND YOU HAVE TO CLEAR ENTRANCE YOU ARE NOT DOING PhD so dont go by all books mentioned here and there
KEEP NCERT + ONE REFERNCE BOOK + MAXIMUM MCQS PRACTICE = Medical SEAT Apart from this, you can add upon it by following books

To be very honest Neet preparation does not depend on the books you choose but since you are insisting, I would try to lay down some materials by which you could benefit
Overall you could be following the study materials of an institution like Aakash Italian, which basically summarise the gist of points from the best of books, along with inputs from NCERT, which should guide you well with your curriculum and pattern of questions.
Talking about individual subject physics has books like SL Arora, HC Verma and Arihant which could help you.
A book like Dinesh for Chemistry, along with copy Agarwal on op Tandon could also be of use to form your concepts in physical chemistry and organic chemistry primarily.
In Biology the gold standard book is definitely Truman, followed by Dinesh and Veer Bala Rastogi.
However more importantly ,than which book to study is how you studied, so I would recommend that you start making notes from the onset, and keep going through these notes and search revision will be of primary help then following any particular book and studying it over and over again.
My recommendation would also be start solving MCQ is weather Devi from the various books provided by Institutions, those available in the market, so that you have a clear idea of your strengths and weaknesses approach the various chapters from all the three subjects and you are able to answer the maximum number of questions correctly and leave out the minimum number of questions and minimise the questions which you answer in correctly in Limited span of time
