The answer to this question may vary. But in my opinion, I would prefer metallurgy to mining engineering because:
Firstly, the mining engineering includes the extraction of materials, the feasibility study of a land for mining, mine design, mine closure etc. The amount of natural resources is limited and so is the number of mines, and you cannot say that number of mines available in nature are infinite.
On the other hand, if you go for metallurgy, it will give you a vast range of stuff to study about. Starting from extraction and mining, ore dressing, microstructures and properties, alloys upto modern aerospace materials. Which means you will get a wider range of opportunities in metallurgy than in mining engineering.
So, its upto you which one you would prefer.

For your best intersts, if you want to go for mining engineering or courses related to it, I would suggest you to opt for B.E. or B.Tech in Metallurgical Engineering. Metallurgy is an important branch of science and is provided by most of the Engineering Colleges in India.
Metallurgy is a branch of Engineering that deals with the study of the science of metals and their properties, including seperating metals from their ores, the making and compounding of alloys, and the technology and science of working and heat-treating metals to alter their physical characteristics.
