Firstly artificial intelligence is developing intelligent machines .
The goal is yo create something that is useful foe humans and make their wok easier and effortless.
It can be language detection ,or robots etc.
You need a strong core mathematics that to logical level .
You should know language like LISP and C.
You can be game developer, or robotics engineer , Computer engineer or a software developer.
Data scientist is a person who predict the growth of any company ,they take huge amount of data and analysis it for reference.
You need a strong maths and programming base for it.
You need language like python , SQL,SAS etc.
An average data scientist can earn upto 6 lakh per year.
cyber security related to a professional who is responsible for creating a secure software or program .
This career opportunities are increasing day by day due to threats and vulnerability of cyber world.
Lastly internet of things is related to an IOT SYSTEM where each and every thing is interlocked to each other like a food chain.
In this field you can be a database analyst or a application architect or IOT cloud engineer .
And personally i feel these four stream have more job opportunities and scope whichever you like to choose it up to you.

Data Science has infinte opportunities in all domains of industry and has excellent placements in almost all good technical institutes. You will basically work as a Data Engineer, Data Analyst, Data Scientist or Business Analyst post your degree. Secondly Data science is somewhere connected with Machine Learning and Artificial Intelligence and its applications, so you can always learn and master those technologies sidewise. Most of the MnCs like Accenture, Microsoft, Goldman Sachhs, American Express, EXL, ZS Associates and so on have impressive opportunitues for Data Engineers with Median package between 8-12 LPA.

No course is easy if you want to get placed into a good company. But, if you do and get better grades with a good academic recorded background, then you will get good placements in all the courses that you have mentioned above.
So, many students opt and go after CSE branch, since it's scope is very high higher than the other ones. And also has better placement offers than other courses.
But, if you have interest in any of the courses then you should definitely go after that one. Because your good academia will fetch you a good placement.
Today, CSE, AI, data science all ha e good scope in multiple fields. But, not all colleges in India offer courses for AI, data science and IoT. So, you would have to choose wisely since colleges offering these courses are low therefore placement offers are also low as compared to CSE branch which almost every engineering college in India offer .
So, overall, all courses are good and it depends on you which one you would like to get into.
