There is lot of scope in engineering field but what matters the most is your vested interest.

Some fields are more in demand in this era like cse, computer science engineering, agricultural engineering. These fields provide you with God job opportunities and help you in your development.

Every engineering field has scope but some have higher demand, the first thing you should look for is your interest because if you are good at something then there is lot of scope.

In terms of job opportunities Computer science is the best field and jobs are plenty with high pay, other fields are electronics and communication, electrical .
