You can chose any stream for graduating your class 11 and 12 - arts, science, engineering, medical, economics, commerce, literature etc. All degree holders in any stream of subjects are eligible for writing the IAS exams.
There is nothing to be particular about any stream in IAS exam. The best way is to choose subjects in which you see future. What would you like to do in future.
UPSC conducts a separate exam in 3 stages.
Only if you succeed in all the stages, you can become an IAS officer.
till class 10 you must have studied subjects such as
Take subject which interests you in class +2. After end of 1st or 2nd year , you can seriously concentrate on IAS. But, be a good student till then .

The eligibility criteria for UPSC is candidates need to pass graduation in any discipline from a recognized university, there is no such restriction in terms of belonging to any specific stream, you need to be 21 years old and you can apply even in the final year, now coming to your question if you're wholly and solely focused on qualifying UPSC exam only in future, it's best you go with humanities stream as you'll anyway be acquainted with the subjects that are included in UPSC syllabus, but remember that UPSC exam has candidates qualifying from diverse backgrounds, also you're still in your school, there is long time for you to appear for the exam, in case you're not so sure about appearing only for UPSC it's good to have a back up plan as well, in recent years if we look at the toppers they come from diverse backgrounds of medical, engineering, commerce etc, hence choose as per your interest and aspirations for future, remember that no matter what subject combinations or stream you choose at 10+2 level or in future, you'll be eligible to appear for UPSC, the only difference is perhaps humanities students are more acquainted with the subjects and hence it becomes a bit easy in that sense, while in case of other stream candidates they have to start afresh, as they have not studied these subjects at their 10+2 level or even in graduation, but the single-minded focus, dedication, and perseverance remain the same for every aspirant.

UPSC exam is held in order to recruit officers into the Indian Civil Services.
Any Indian citizen who is a graduate and above the age of 21 can take UPSC exam provided he/she fulfils all the other eligibility conditions for the UPSC exam. Students from different streams take this exam including science, arts, commerce, engineering, medical, etc. There is no restriction on the subjects studied by the candidates for graduation.
The subjects that are a part of the syllabus are mostly polity, history, geography, economics, current affairs including the latest science and technology, agriculture, any topic of national importance, etc.
