CSE core vs CSE(AI and ML)  I would recommend you to go with a specialization in AI and ML because Artificial Intelligence will have a good scope in both jobs as well for careers and machine learning is a very important domain in becoming a data science engineer. If you have got interested in any of the fields you have mentioned then there is no problem in moving with those fields it's just the interest that brings the best. It will enhance your abilities and skills.

Also if you are still confused about which one to choose there are other specializations also available like Cloud Computing, Cybersecurity, IoT, Ethical Hacking.
