All the course options are great and you could go with any one of them.However,if you do get all of them,you could take up the CSE with IoT at VIT Vellore campus .

IoT is a very niche field and has a lot of applications in our lives.You could have a look at some online videos or even TED Talks to know more about it.The more you build your own stuff,the better it is.

So take up CSE with IoT if you are really a hands-on person

Data Science is the new Oil.With so much of Data available,it becomes imperative to know how to effectively use them to leverage benefits and derive meaningful data and conclusions out of it.You would be handling massive datasets and fair amount of ML A=and AI would be involved here.

You could take a look at some courses from Udemy or Coursera to know more about it and decide if you really like it.

AI and ML has a lot of untapped potential and a huge job market today.A lot of companies are shifting towards ML as it helps their operations.The Ml course by Andrew Ng on coursera is one of the best and you vould take a look at it too.

Ultimately all of them are really good options and you could choose any one of them.However,my preference would be VIT Vellore as it provides better placement opportunities and you get to be involved in many technical and non technical activities.
