I would say that Computer Science, Mathematics & Computing, Manufacturing Science and Economics are some great courses. These are branches that are generally available in different and mutually exclusive rank ranges and thus this gives a good option for entire spectrum of ranks that one can end up with.
But the truth is your branch creates little difference in where you end up after graduating from the old IITs. What matters is getting into the institute.
The institute offers same opportunities to all the students irrespective of their branches. Its these opportunities that helps these students progress better than that of any other engineering graduate. These opportunities include best peer-to-peer learning environment, abundance of societies to cater to different student interests, freedom to take up extra credits/projects etc., support for national/international level extra-academic events etc.
