The animal starch is glycogen. It is a polysaccharide (complex carbohydrate) that acts as a glucose storage form in animals, including humans. Glycogen is mostly stored in the liver and muscles and may be easily converted into glucose when the body requires energy. Cellulose is present in plant cell walls, and serves as structural support; however, it is not employed for energy storage. Chitin is present in arthropod exoskeletons, and fungal cell walls, where it provides structural support.
