will I be able to do a major in sociology at the graduate level if I have also taken some other subjects at the undergraduate level according to the new education policy

Hello,

it will be possible but there are rules. You can't choose different branch in PG which you studied in UG. you can choose other branch as  course like Minor or additional credit paper.

as of now, it is hard to say as there needs to be re-newed rule book mentioning about the eligibility criteria and the required qualification for a degree or course.

until and unless that is not formulated again it hard to say which one to follow. it is still unclear.
