Yes you can definitely get in some medical college in MBBS and prepare for AIIMS simultaneously.
But the point here is, is this justifiable?
First of all you need to understand that MBBS is a very difficult course and requires you to devote yourself fully to the subject. You can't just not study and pass in your exams. It is a professional course and you have to treat the patients which us not a piece of cake.
I understand your preference of AIIMS over the orher medical Colleges. AIIMS is literally the best nedical college in India. But in the end your knowledge and skills matter in the clinical practice and not your alma mater. You have to keep in mind, that preparing for AIIMS is not a piece of cake. You just can't give your precious time to anything else. Let go of the sophisticated study of MBBS.
Secondly the other thing that need to be kept in mind before juggling between the two things is that almost every Medical college makes you sign a bond or bond agreement which states that you are bound to pay a bond fee to the college if you are leaving which us essentially wasting one medical seat. Then only you can get your documents back from college.
So though you can do both things but I'd suggest you to go for the either one.

For admission in government medical college candidates from general category requires minimum 550-600+ marks in NEET. As you have not mentioned your category I am considering that you belong to general category. To qualify for seat in government medical college your percentile should be minimum 50th percentile.
To get admission in AIIMS you need score 95-98th+ percentile in NEET which means your score has to be more than 680+ in NEET.
