NCERT text books forms the base of NEET preparation, but the approach is different for each subject:-
BIOLOGY- Biology NCERT text books are considered as Bible for NEET. 85-90% questions are based entirely on NCERT. So, it is advised to be thorough with text books (diagrams too!)
CHEM- Inorganic and Organic chemistry are mostly based on NCERT text books. You should go through each reaction mentioned in organic section. For physical chem, it will be required in theoretical questions only. If you know the way to approach problems, you can skip it.
PHY- approach for physics is similar to physical chemistry. you can read it once to understand the concept. It helps to solve AIIMS type of questions which use concepts. You should definitely go for other books for MCQ practice.

NCERT books can help you to qualify and brush up your skills on the topics you have already studied. To get a good score you need to have some reference books apart from NCERTs and your 11 and 12 books. You need to practice a lot from various books. NCERT is enough when you really know each of the portions of the chapters in depth.
