While preparing for the UPSC examination and choosing a field of graduation for that it's best that the candidate go by their natural interest of subjects and not just use choose because of sheer pressure for preparation of UPSC IAS examination.
The optional subjects in UPSC examination consist of - sociology, agriculture, Medical Science, literature, anthropology, public administration, psychology, and law. So, it doesn't depend that whether you have pursued your graduation from field such as medical science, Engineering, arts and humanities, or any other relevant degree such as BCom/MBA/B.Sc or others.

You can choose any subject or course of your choice based on your interest for your graduation.
This is because,
to be eligible for UPSC examination there is no compulsion to be a graduate in a particular subject, all you need to be eligible is that you should be a graduate in any discipline and 21- 32 years old , so you are free to do 10+2 and graduation in any subject.You can check upsc eligibility criteria at https://competition.careers360.com/articles/upsc-ias-eligibility-criteria/amp
So you can choose any discipline of your interest, but yes if you choose BA
then
choosing BA can be really helpful for your UPSC examination, this is because in Arts you will be learning subjects like history , polity etc which are a part of the UPSC syllabus so it will help you in your upsc examination
Some of the best graduation courses regarding upsc are :-
BA Public Administration – Highly relevant, it has compact syllabus, it has a lot of overlaps with your polity & governance part in your GS II.
Ba Sociology – it's study of society, lots of material are useful in GS I, Essay, in Ethics paper as well.
BA History – useful for prelims and your GS I.
BA Geography -relevant for both prelims and GS I
BA Political Science – relevant for both prelims and GS II
Some other options are are BA Economics,BA Philosophy etc.
So, take your time and decide.

UPSC civil services examination has 3 stages listed below :-
prelims exam :- it is objective paper and is of qualifying nature , there are 2 papers in prelims
Mains exam. :- it is descriptive /written examination . There are a total of 9 papers in Mains examination
Interview :- After qualifying mains, you have to go through interview round, and it is more of test of your personality rather than knowledge.
