According my opinion if you are from civil,mechanical or the related branch of these two then it is very beneficial  for taking 2 papers in GATE 2021 exam.The combination that you may make is me with xe section paper and similar.

Also for another branches you may going with 2 papers is always beneficial because you will get two chances to score a good in GATE at a time.From this year the eligibility conditions are also changed that you may give the gate in 3rd year of your B.tech program. So if you are giving 2 papers in 3rd year and 2 in 4th th then you will get 4 times the chance to score well in GATE during the graduation years that is no extra one year dropping is required so this is the main importance of giving 2 papers at a time.

Taking only 1 paper- If you will give only one paper then you have the only opportunity to score in GATE . Also if you not score well then you have to wait for one year to give GATE exam again or if you in 4th year then you must have to drop one year for GATE.

Taking 2 papers-It is always helpful for your career building as you get more chance to score good.As the combination of both the papers is related to each other hence you don't want to study different subjects that is in similar type study you may get 2 chances a year to score hence it is very good chance to take 2 papers in GATE 2021.

So I am suggesting you to go with the two papers as it is very useful and helpful towards your healthy career
