If you want IIIT or NIT then you can apply as you mentioned with your caste category validations in the JOSAA and wait for the seat allotment. Moreover the branch choosing is completely dependent on you, with 83%ile in jee mains and category facility you can first decide yourself your choice of branch, check its respective cut-off and then apply on JOSAA.

There is no minimum Percentage required for JEE mains registration and appearing for the exam. However, for applying to IITs, NITs, and IIITs, you need a minimum percentage of 75% for the general category and 65% for the SC/ST categories. Since you have 59%, you are not eligible to get into IIITs.

However, GFITs do not have such criteria for admission, they do not consider 12th Board percentages so you can consider applying to them because they only look into your JEE score.
